Hello Little Nephew!

Welcome sweet little boy! Today he got to meet his sisters and brother and seemed very alert to their voices. It was really adorable.

Going Back to January and February

Ever since getting back from my trip to PA, it just seems like life has been zooming past and I have fallen way behind in blogging! Sorry Momma! Morning or should I say Night Sickness and heartburn haven't made me feel all too much like sitting in front of the computer at 9 o'clock at night. In fact, some nights I'm already asleep by then! :)

This lovely photo was taken by Nathan using my camera. His is getting quite good at picture taking, especially since Erika's birthday gift of the kid camera for him. He recently took it with him and took pictures of what he saw while we were driving on the freeway.

And the rest I took:

More to come, hopefully not a month from now!

Blueberry Muffin Recipe

Mmmm...these were very good! If you don't have buttermilk, then just substitute with regular milk and 1 teaspoon of lemon juice stirred into the milk prior to using. Also, I just used frozen blueberries, let them soak in water for a bit, drained them and coated them in flour like the recipe calls for.

Ingredients:
1/2 cup unsalted butter
1 1/4 cups white sugar
1/2 teaspoon salt
2 eggs
2 cups all-purpose flour, divided
2 teaspoons baking powder
1/2 cup buttermilk
1 pint fresh blueberries - rinsed, drained
and patted dry
2 tablespoons white sugar
Directions:
1. Position rack in the middle of oven. Preheat oven to 375 degrees F (190 degrees C). Spray the top of a muffin pan with non-stick coating, and line with paper liners.
2. In a large bowl, cream together the butter, 1 1/4 cups sugar and salt until light and fluffy. Beat in the eggs one at a time. Mix together 1 3/4 cup of the flour and baking powder. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Crush 1/4 of the blueberries, and stir into the batter. Mix the rest of the whole blueberries with the remaining 1/4 cup of the flour, and fold into the batter. Scoop into muffin cups. Sprinkle tops lightly with sugar.
3. Bake in preheated oven for 30 minutes, or until golden brown, and tops spring back when lightly tapped.
